Cookie Base

  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1/2 cup unsalted butter, softened Use softened for easy mixing.
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon baking powder Essential for texture.
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips Can substitute with white chocolate.

Filling and Topping

  • 1/2 cup pastry cream (or vanilla pudding) Store-bought works fine.
  • Powdered sugar for dusting For serving.

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a bowl, cream together the softened butter and sugar until light and fluffy.
  • Add the egg and vanilla extract, mixing until well combined.
  • In another bowl, whisk together the flour, baking powder, and salt.
  • Gradually add the dry mixture to the wet ingredients and mix until just combined.
  • Fold in the chocolate chips.

Baking

  • Drop tablespoon-sized balls of dough onto a baking sheet lined with parchment paper.
  • Bake for 10-12 minutes or until the edges are lightly golden.
  • Allow to cool completely.

Assembly

  • Once cooled, fill half of the cookies with pastry cream and top with another cookie.
  • Dust with powdered sugar before serving.

Notes

These cookies are best enjoyed fresh. Store leftovers in an airtight container in the refrigerator for up to a week. For longer storage, freeze and thaw in the fridge before serving. Don't overmix the dough to keep cookies tender.
