Ingredients
  

For the Marinade

  • 1 cup bourbon
  • 1/2 cup peach preserves
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

For the Salmon

  • 4 pieces salmon filets
  • 2 pieces fresh peaches sliced

Preparation

  • Preheat the oven to 400°F (200°C).
  • In a bowl, mix bourbon, peach preserves, olive oil, salt, and black pepper to create the marinade.
  • Marinate the salmon filets in the mixture for at least 30 minutes.
  • Slice the fresh peaches.

Cooking

  • Heat a skillet over medium-high heat and sear the salmon filets skin-side down for 3-4 minutes.
  • Flip the salmon and add peach slices to the skillet.
  • Pour the remaining marinade over the salmon and peaches.
  • Transfer the skillet to the oven and roast for another 10-15 minutes, or until the salmon is cooked through and the peaches are tender.
  • Serve the salmon with the caramelized peach glaze.

Notes

To keep leftovers fresh, store uneaten salmon in an airtight container in the fridge for up to 3 days. For long term storage, freeze in a freezer-safe container for about 2 months.
