Boursin Baked Salmon

Ingredients
  

  • 4 (6-ounce) salmon fillets
  • 5.2 ounces Boursin Garlic & Fine Herbs cheese, softened
  • 1/2 cup panko breadcrumbs
  • 1 tablespoon extra -virgin olive oil
  • 1/2 teaspoon lemon zest
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon cracked black pepper
  • 1 tablespoon fresh parsley, finely chopped

Instructions
 

  • Preheat oven to 400°F (200°C) and line a rimmed baking sheet with parchment paper.
  • Pat the salmon fillets dry with paper towels and season the tops with salt and pepper.
  • Place salmon fillets on the prepared baking sheet skin-side down.
  • Spread approximately 1.25 ounces of Boursin cheese in an even layer over the top of each fillet.
  • In a small bowl, combine panko breadcrumbs, olive oil, and lemon zest until the crumbs are evenly coated.
  • Press the breadcrumb mixture firmly into the cheese layer on each fillet.
  • Bake for 12 to 15 minutes, or until the salmon reaches an internal temperature of 145°F (63°C) and the panko topping is golden brown.
  • Garnish with fresh parsley and serve immediately.
