For the filling

  • 12 large large eggs
  • 1 lb lean turkey sausage Can substitute with chicken sausage or a plant-based alternative.
  • 1 cup bell peppers, diced Feel free to use any color.
  • 1 cup spinach, chopped
  • 1 cup onion, diced
  • 8 whole whole wheat tortillas Can swap for corn tortillas for gluten-free.
  • to taste Salt and pepper
  • as needed Cooking spray or olive oil For greasing the baking dish.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large skillet, cook the turkey sausage over medium heat until browned and cooked through. Remove from heat.
  • In a bowl, whisk together the eggs and season with salt and pepper.
  • Add the cooked sausage, bell peppers, onions, and spinach to the eggs and mix well.
  • Lightly grease a sheet pan or baking dish with cooking spray or olive oil.
  • Pour the egg mixture evenly into the pan and spread it out.
  • Bake for 20-25 minutes, or until the eggs are set.
  • Once cooked, let it cool slightly, then cut into squares.
  • Take one tortilla and fill it with a square of the breakfast mixture.
  • Roll the tortilla tightly to form a burrito.
  • Repeat with remaining tortillas and filling.

Notes

These can be wrapped in foil and stored in the refrigerator for meal prep. You can also add toppings like salsa or avocado when serving.
