Ingredients
  

Brownie Base

  • 1 box 9 oz fudge brownie mix
  • 1 large egg
  • 1 tbsp cold water

Caramel Layer

  • 14 oz unwrapped soft caramels
  • 1 can 5 oz evaporated milk

Cheesecake Filling

  • 16 oz cream cheese, room temperature Ensure cream cheese is at room temperature for easier mixing.
  • ½ cup granulated sugar
  • 1 tsp pure vanilla extract
  • 2 large eggs

Topping

  • 1 cup chocolate fudge sauce For drizzling on top before serving.

Preparation

  • Mix brownie mix, egg, and water. Press into a greased 9-inch springform pan.
  • Bake at 350°F (175°C) for 25 minutes until set.
  • Melt caramels with evaporated milk over low heat, stirring constantly.
  • Pour caramel over brownie base and cool for 15 minutes.
  • Beat cream cheese until fluffy. Add sugar, vanilla, and eggs.
  • Spread cream cheese mixture over caramel layer carefully.
  • Bake for 40 minutes until the center barely jiggles.
  • Cool completely, then chill for 4+ hours before serving with fudge drizzle.

Notes

This cheesecake can be served with whipped cream or fresh fruit like strawberries for a refreshing touch. Store it in the fridge covered tightly with plastic wrap and it can be frozen for up to two months.
