Ingredients
  

For the cookie dough

  • 1 cup unsalted butter, softened Use room temperature butter for easier mixing
  • 3/4 cup granulated sugar
  • 3/4 cup brown sugar, packed
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 2 1/4 cups all-purpose flour Can substitute half with whole wheat flour for a healthier option
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups chocolate chips Can substitute with peanut butter chips or other varieties

For the brownie filling

  • 1 batch brownie batter (store-bought or homemade) If too thick, thin with a tablespoon of water or milk

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a large mixing bowl, cream the softened butter with the granulated and brown sugars until smooth.
  • Beat in the vanilla extract and eggs, one at a time.
  • In another bowl, whisk together the flour, baking soda, and salt.
  • Gradually add the dry ingredients to the wet mixture, stirring to combine.
  • Fold in the chocolate chips.

Assembly

  • Take a small amount of cookie dough, flatten it out, and add a spoonful of brownie batter in the center.
  • Wrap the cookie dough around the brownie to form a ball.
  • Place the balls on a baking sheet lined with parchment paper.

Baking

  • Bake for 9-11 minutes or until golden around the edges.
  • Allow to cool slightly before serving.

Notes

Serve warm with a glass of milk or ice cream. Drizzle with melted chocolate or caramel for an extra treat. Store cookies in an airtight container at room temperature for up to five days, or freeze for up to three months.
