Ingredients
  

For the filling

  • 1 cup cherry tomatoes, diced
  • 1/4 cup fresh basil, chopped
  • 1 clove garlic, minced
  • to taste Salt

For the sandwich

  • 4 slices bread Use fresh bread for the best texture.
  • 2 tablespoons olive oil
  • 8 ounces mozzarella cheese, sliced Feel free to substitute with other cheeses.

Preparation

  • In a bowl, mix the diced tomatoes, basil, minced garlic, salt, and pepper.

Grilling

  • Heat olive oil in a pan over medium heat.
  • Begin by grilling two slices of bread in the pan.
  • Once one side is golden brown, flip them and layer mozzarella on the untoasted side.
  • Add the tomato mixture on top of the cheese and top with another slice of bread.
  • Grill until both sides are golden and the cheese is melted.
  • Serve hot.

Notes

Let the grilled cheese rest for a minute before slicing. Avoid using too much heat to prevent burning the bread. Serve immediately for optimal taste.
