Ingredients

For the Filling

  • 1 lb Ground Chicken Can be substituted with ground turkey or lean beef.
  • 6 slices Cooked Bacon Crumble before use.
  • 1/2 cup Buffalo Sauce Adjust for spice preference.
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1 tsp Paprika
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • 8 oz Mozzarella Cheese Cut into cubes.

For Coating

  • 1 cup Plain Flour
  • 2 large Eggs Beaten.
  • 1 cup Breadcrumbs Panko or Regular for extra crunch.

For Frying

  • 2 cups Vegetable Oil or Canola Oil For frying.

Instructions

Preparation

  • In a bowl, combine ground chicken, crumbled bacon, buffalo sauce, garlic powder, onion powder, paprika, salt, and black pepper. Mix well until everything is evenly blended.
  • Take a small amount of the chicken mixture and flatten it in your palm. Place a cube of mozzarella in the center and wrap the chicken around it, forming a ball. Repeat with the remaining mixture.
  • Set up a breading station with flour in one bowl, beaten eggs in another, and breadcrumbs in a third. Roll each bomb in flour, dip it in eggs, and then coat with breadcrumbs.

Cooking

  • Heat oil in a large skillet over medium heat. Once hot, carefully add a few bombs at a time. Fry until golden and cooked through, about 4-5 minutes. Remove and drain on paper towels.
  • Let the bombs cool slightly before serving. They’re best enjoyed warm!

Notes

These bites pair wonderfully with celery sticks and ranch dressing for dipping. Store leftovers in an airtight container in the fridge for up to 3 days.
