Preparation of Filling

  • In a large bowl, combine the shredded rotisserie chicken, cheddar cheese, mozzarella cheese, buffalo sauce, and ranch seasoning until well mixed.

Assembling Egg Rolls

  • Lay an egg roll wrapper on a flat surface and place a spoonful of the chicken mixture in the center.
  • Fold the sides of the wrapper over the filling and roll it up tightly.
  • Seal the edges with a little water.
  • Repeat with the remaining wrappers and filling.

Cooking Options

  • For air frying, preheat the air fryer to 375°F (190°C) and spray the egg rolls with cooking spray. Place them in the basket and cook for about 10-12 minutes, flipping halfway through, until golden and crispy.
  • For frying, heat oil in a deep pan and fry the egg rolls until golden brown.
  • For baking, preheat the oven to 400°F (200°C), place the egg rolls on a baking sheet, and bake for about 15-20 minutes until golden and crispy.

Serving Suggestions

  • Serve with additional buffalo sauce or ranch dressing for dipping.

Notes

Store leftovers in an airtight container in the fridge for up to three days. For freezing, wrap each cooked egg roll in plastic wrap and store in a freezer-safe bag for up to three months.
