Ingredients
  

  • 1 cup unsalted butter, cold and cubed
  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 tbsp brown sugar
  • 1/4 tsp salt
  • 16 oz cream cheese, softened
  • 2/3 cup granulated sugar (for filling)
  • 2 large eggs
  • 1 tsp vanilla extract
  • 3/4 cup fig jam or preserves

Instructions
 

  • Preheat oven to 350°F (175°C). Grease or line a 9x13-inch baking pan with parchment, leaving an overhang for easy removal.
  • Mix flour, sugars, and salt. Cut in butter until mixture is crumbly. Press two-thirds into prepared pan for crust, reserve remaining for topping.
  • Beat softened cream cheese until smooth. Add sugar, then eggs one at a time, followed by vanilla. Mix until creamy.
  • Spread fig jam evenly over crust. Pour cream cheese filling on top. Sprinkle reserved crust mixture evenly over filling.
  • Bake 30–35 minutes, until golden and set. Cool completely before slicing into bars.

Notes

Line your baking pan with parchment for easy removal. Let the bars cool completely before slicing to keep clean edges. Store covered in the fridge for up to 5 days or freeze for up to 3 months. For extra flavor, add lemon zest to the filling or chopped nuts to the topping.
