Cadbury Mini Egg Cookies

Ingredients
  

  • 1/2 cup unsalted butter, softened
  • 1/2 cup light brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 large egg , room temperature
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all -purpose flour
  • 1 teaspoon cornstarc h
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon sal t
  • 1 cup Cadbury Mini Eggs, roughly crushed
  • 1/2 cup semi -sweet chocolate chips

Instructions
 

  • Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
  • In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  • Beat in the egg and vanilla extract until fully incorporated.
  • In a separate bowl, whisk together the flour, cornstarch, baking soda, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Fold in the crushed Cadbury Mini Eggs and semi-sweet chocolate chips by hand.
  • Scoop rounded tablespoons of dough (approximately 1.5 ounces) and place them 2 inches apart on the prepared baking sheets.
  • Bake for 10-12 minutes or until the edges are lightly golden but the centers still look slightly soft.
  • Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
