  • 1 lb smoked sausage (sliced) Use your preferred flavor.
  • 1 tablespoon Cajun seasoning Adjust quantity for desired spice level.
  • 1 cup bell pepper (diced)
  • 1 cup onion (diced)
  • 2 cloves garlic (minced)
  • 1 cup heavy cream Can substitute half-and-half for a lighter version.
  • 1 cup shredded cheese (cheddar or Monterey Jack) Experiment with different cheeses.
  • 2 tablespoons olive oil
  • to taste Salt and pepper Season to your preference.

Instructions
 

Cooking Pasta

  • Cook the pasta according to package instructions until al dente; drain and set aside.

Cooking Sausage and Vegetables

  • In a large skillet, heat olive oil over medium heat. Add the sliced sausage and sauté until browned.
  • Add the diced bell pepper, onion, and garlic; sauté until the vegetables are softened and fragrant.

Making the Sauce

  • Stir in the Cajun seasoning, and then add the heavy cream, mixing well. Allow the sauce to simmer for a few minutes until slightly thickened.

Combining

  • Add the cooked pasta and shredded cheese to the skillet; stir until the cheese is melted and everything is well coated.
  • Season with salt and pepper to taste. Garnish with chives or parsley before serving.
