Ingredients
  

Cookie Base

  • 1 cup ricotta cheese
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Add-ins

  • 1/2 cup mini chocolate chips
  • 1/4 cup unsalted butter, softened
  • 1 large egg Use room temperature for better mixing.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a bowl, mix the ricotta cheese, powdered sugar, and vanilla extract until smooth.
  • In another bowl, combine flour, baking powder, and salt.
  • In a separate bowl, cream the softened butter and egg together.
  • Gradually add the dry mixture to the wet mixture until combined.
  • Fold in the ricotta mixture and mini chocolate chips.

Baking

  • Drop spoonfuls of the cookie dough onto a baking sheet lined with parchment paper.
  • Bake for 12-15 minutes or until the edges are lightly golden.
  • Let cool and enjoy your cannoli cookies!

Notes

These cookies are best served with a dusting of powdered sugar on top or alongside a scoop of vanilla ice cream. Store in an airtight container at room temperature for up to a week or freeze for longer storage.
