Caramelized Onion & Goat Cheese Pizza

Ingredients
  

For the Pizza Dough

  • 4 cups strong white bread flour High-gluten flour for a crisp crust
  • 1 teaspoon sea salt
  • 1.25 oz instant yeast One packet
  • 1 teaspoon sugar Helps activate yeast
  • 2 tablespoons extra virgin olive oil
  • 1.5 cups warm water Hot to touch, may need up to 1 3/4 cups

For Toppings

  • 1 cup Marinara Sauce
  • 8 oz Log goat's cheese Cut into slices
  • 1/2 cup fresh parmesan cheese
  • 1 medium onion, thinly sliced For caramelizing
  • 1 tablespoon olive oil For cooking onions
  • 1 bunch fresh spinach leaves
  • 2 tablespoons dried oregano For seasoning

Instructions
 

Making the Dough

  • In a large bowl, mix the flour, salt, instant yeast, and sugar.
  • Add the olive oil and quickly stir to combine.
  • Make a well in the center and pour in about 1.5 cups of warm water.
  • Use a fork to mix the flour into the water until combined; add more water if it's too dry.
  • The resulting dough should be very sticky.
  • Lightly flour a surface and knead the dough for 5 to 10 minutes until soft and springy.
  • Place the dough in a floured bowl, cover with a damp cloth, and let sit in a warm spot for 1 to 2 hours to double in size.

Caramelizing the Onions

  • In a skillet over medium heat, add 1 tablespoon of olive oil and the sliced onions.
  • Cook for about 3 to 5 minutes until they start to brown.
  • Reduce heat and cook for another 15 to 20 minutes, stirring occasionally. Add a splash of water if needed to prevent sticking.

Assembling and Baking the Pizza

  • Preheat your oven to 500°F and place a pizza stone inside to heat up.
  • Take one ball of the pizza dough, press it down to form a disk, and roll out to about 10 to 12 inches.
  • Place the rolled dough on parchment paper and top with marinara sauce, oregano, caramelized onions, goat cheese, parmesan cheese, and fresh spinach.
  • Carefully transfer the pizza to the heated stone in the oven.
  • Bake for about 4 to 6 minutes until golden and crispy.
  • Serve immediately and enjoy!

Notes

Best served with a fresh side salad or garlic bread. For leftovers, let them cool down and wrap tightly. Store in the fridge for up to 3 days, or freeze in an airtight container for longer storage.
