For the Marinade:
- 1/4 cup orange juice
- 2 tbsp lime juice
- 1 tbsp lemon juice
- 3 tbsp olive oil
- 3 garlic cloves minced
- 1/4 cup chopped cilantro
- 1 jalapeño diced (seeds removed for milder flavor)
- 1 tsp ground cumin
- 1 tsp oregano
- 1 tsp chili powder
- 1 tbsp brown sugar
For the Meat:
- 1.5 lbs flank or skirt steak
- Salt and pepper to taste
For Serving:
- 8 corn tortillas
- 1/2 cup diced white onion
- 1/4 cup chopped fresh cilantro
- 2 limes cut into wedges
- 1 avocado sliced (or guacamole)
- Salsa of choice
Prepare the Marinade:
In a bowl, whisk together citrus juices, olive oil, garlic, cilantro, jalapeño, and spices.
Grill the Carne Asada:
Remove steak, pat dry, and season with salt and pepper. Grill over high heat, about 4-5 minutes per side for medium-rare (internal temp 130-135°F). Let rest 10 minutes.
Slice & Assemble Tacos:
Cut steak thinly against the grain. Warm tortillas. Top with steak, onion, cilantro, lime juice, avocado, and salsa.
Flank steak is leaner; skirt steak is more flavorful.
Marinating too long can make the meat mushy.
Corn tortillas keep it gluten-free.
Double tortillas = authentic street taco style.
