Cake Layers:
- 2 1/4 cups all-purpose flour
- 2 1/2 tsp cornstarch
- 1/2 tsp baking soda
- 2 1/2 tsp baking powder
- 1/2 tsp salt
- 1 cup unsalted butter softened
- 1/4 cup vegetable oil
- 1 1/2 cups sugar
- 4 large eggs
- 2 tsp vanilla extract
- 1 cup buttermilk
Chantilly Cream:
- 3 cups heavy whipping cream
- 8 oz mascarpone cheese
- 8 oz cream cheese
- 3/4 cup powdered sugar
Berry Filling and Syrup:
- 3 cups fresh berries strawberries, raspberries, blueberries, blackberries
- 1/2 cup raspberry jam
- 1/4 cup water
Prepare Cake Layers:
Preheat the oven to 335°F (168°C). Grease and line three 8-inch pans with parchment paper.
In a bowl, whisk together flour, cornstarch, baking soda, baking powder, and salt.
In a separate bowl, beat butter, oil, and sugar until fluffy. Add eggs one at a time, followed by vanilla extract.
Alternate adding dry ingredients and buttermilk to the wet mixture, mixing until smooth.
Divide the batter among the pans and bake for 30-35 minutes. Cool completely.
Make Chantilly Cream:
Beat mascarpone, cream cheese, powdered sugar, and vanilla extract until smooth.
Whip heavy cream to stiff peaks in a separate bowl and gently fold into the mascarpone mixture.
Assemble the Cake:
Level the cake layers and brush with berry syrup.
Spread Chantilly cream and berries between each layer.
Coat the cake with a thin crumb layer of cream, chill, and finish with a thicker layer of frosting. Decorate with fresh berries.
