Ingredients
  

Cake Layers:

  • 2 1/4 cups all-purpose flour
  • 2 1/2 tsp cornstarch
  • 1/2 tsp baking soda
  • 2 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup unsalted butter softened
  • 1/4 cup vegetable oil
  • 1 1/2 cups sugar
  • 4 large eggs
  • 2 tsp vanilla extract
  • 1 cup buttermilk

Chantilly Cream:

  • 3 cups heavy whipping cream
  • 8 oz mascarpone cheese
  • 8 oz cream cheese
  • 3/4 cup powdered sugar

Berry Filling and Syrup:

  • 3 cups fresh berries strawberries, raspberries, blueberries, blackberries
  • 1/2 cup raspberry jam
  • 1/4 cup water

Instructions
 

Prepare Cake Layers:

  • Preheat the oven to 335°F (168°C). Grease and line three 8-inch pans with parchment paper.
  • In a bowl, whisk together flour, cornstarch, baking soda, baking powder, and salt.
  • In a separate bowl, beat butter, oil, and sugar until fluffy. Add eggs one at a time, followed by vanilla extract.
  • Alternate adding dry ingredients and buttermilk to the wet mixture, mixing until smooth.
  • Divide the batter among the pans and bake for 30-35 minutes. Cool completely.

Make Chantilly Cream:

  • Beat mascarpone, cream cheese, powdered sugar, and vanilla extract until smooth.
  • Whip heavy cream to stiff peaks in a separate bowl and gently fold into the mascarpone mixture.

Assemble the Cake:

  • Level the cake layers and brush with berry syrup.
  • Spread Chantilly cream and berries between each layer.
  • Coat the cake with a thin crumb layer of cream, chill, and finish with a thicker layer of frosting. Decorate with fresh berries.
