Green Bean Bundles

  • 10 oz fresh green beans, trimmed Use fresh green beans for the best texture.
  • 6 slices thin-cut bacon If bacon is too thick, cut it in half.
  • 2 oz cream cheese, softened Blend with other ingredients for filling.
  • 2 oz shredded cheddar cheese Try different cheese for varied flavors.
  • 1 clove garlic, minced
  • 1 tablespoon fresh chives, finely chopped (optional) Omit if not desired.
  • 1/4 teaspoon black pepper Adjust to taste.
  • 1 tablespoon olive oil
  • 1 tablespoon brown sugar
  • 1/2 teaspoon smoked paprika

Preparation

  • Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or foil.
  • Blanch green beans in boiling salted water for 2 to 3 minutes until vibrant and slightly tender. Drain and transfer to an ice bath to halt cooking. Drain again and pat dry.
  • In a mixing bowl, blend cream cheese, cheddar cheese, minced garlic, chives (if desired), and black pepper until smooth.
  • Separate the green beans into 6 equal portions. Spread a layer of cheese mixture onto each bacon slice.
  • Arrange a portion of green beans at one end of each bacon slice and roll up tightly to secure bundles. Place seam-side down on the prepared baking sheet.
  • Combine olive oil, brown sugar, and smoked paprika. Brush glaze over each bacon bundle using a pastry brush.

Baking

  • Bake for 22 to 25 minutes until bacon is crisp and cheese is bubbling. Optionally, broil for 1 to 2 minutes for enhanced crispness.
  • Allow bundles to rest on the tray for 3 to 5 minutes before serving.

Notes

These bundles are great for pairing with roast chicken or grilled meats. Store leftovers in an airtight container in the fridge for up to 3 days or freeze raw bundles before baking.
