Ingredients
  

  • 2 cups frozen corn (thawed) or canned corn, drained
  • 8 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 1 can (4 oz) diced green chiles (or substitute jalapeños)
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Instructions
 

  • Preheat oven to 375°F (190°C). In a mixing bowl, combine softened cream cheese, corn, cheddar cheese, diced green chiles, and garlic powder. Mix until smooth.
  • Add onion powder, salt, and pepper. Stir well, then transfer the mixture into a baking dish.
  • Bake for 20–25 minutes until hot and bubbly. Remove from oven and let cool slightly before serving.
  • Serve warm with tortilla chips, crackers, pita bread, or fresh veggies.

Notes

Make ahead and store in the fridge for up to 3 days. Reheat before serving until warm and gooey. Serve with tortilla chips, crackers, baguette slices, pita, or veggie sticks. For a twist, try different cheeses, add jalapeños for heat, or stir in chicken broth or white wine for extra depth.
