Ingredients
  

For the filling

  • 1 cup cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1 cup cooked shrimp, chopped
  • 1 cup lump crab meat
  • 1/2 cup salsa
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

For frying

  • 10 pieces corn tortillas Warm before using
  • Oil for frying Use enough to submerge taquitos

Preparation

  • In a large bowl, mix together the cream cheese, cheddar cheese, shrimp, crab meat, salsa, garlic powder, onion powder, salt, and pepper until well combined.
  • Warm the tortillas in a pan to make them pliable.
  • Spoon a generous amount of the filling onto each tortilla, roll tightly, and secure with a toothpick if necessary.

Cooking

  • Heat oil in a skillet over medium heat. Fry the taquitos until golden and crispy, about 2-3 minutes per side.
  • Drain on paper towels and serve warm with additional salsa or dipping sauces.

Notes

These taquitos are best served with fresh salsa, guacamole, or a cool sour cream dip. For storage, keep leftovers in an airtight container in the fridge for up to 3 days, or freeze before frying.
