Cheesy Mozzarella Bites

Crispy on the outside and melty on the inside, these homemade cheesy mozzarella bites are way better than anything frozen. Easy to make, endlessly customizable, and absolutely irresistible — perfect for game night, parties, or when the cheesy cravings hit.

Equipment

Ingredients
  

For the Cheesy Filling:

  • 2 cups mozzarella cheese low moisture, cubed or shredded
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp cream cheese softened
  • 1/2 tsp garlic powder
  • 1 tsp Italian seasoning

For the Coating:

  • 1/2 cup all-purpose flour
  • Pinch of salt
  • 2 large eggs
  • 1 tbsp water
  • 1 cup panko breadcrumbs
  • 1/2 cup regular breadcrumbs
  • 2 tbsp grated Parmesan cheese
  • 1 tsp Italian seasoning
  • Vegetable oil for frying (canola or peanut oil recommended)

Instructions
 

Step 1: Prep the Cheese Mixture

  • In a bowl, mix mozzarella, Parmesan, and cream cheese.
  • Add garlic powder and Italian seasoning.
  • Chill mixture in fridge for 15–20 minutes.

Step 2: Shape the Bites

  • Scoop 1 tbsp of mixture and roll into balls.
  • Place on parchment paper.
  • Freeze for 10 minutes.

Step 3: Bread the Bites

  • Set up 3 bowls:
  • Bowl 1: flour + pinch of salt
  • Bowl 2: beaten eggs + water
  • Bowl 3: panko, regular breadcrumbs, Parmesan, Italian seasoning
  • Coat each ball in flour, then egg, then breadcrumbs.
  • For extra crunch, double coat with egg and breadcrumbs again.

Step 4: Fry

  • Heat oil to 350°F.
  • Fry 4–5 bites at a time for 2–3 minutes until golden.
  • Drain on paper towels and sprinkle with salt.

Step 5: Baking Option

  • Preheat oven to 425°F.
  • Place breaded bites on greased baking sheet.
  • Lightly spray with oil and bake for 8–10 minutes, flipping halfway.

Notes

Freeze before frying to avoid explosions.
Customize with jalapeños, herbs, or even mini pepperoni.
Can be made ahead and frozen for up to 3 months.
Use an air fryer at 390°F for 6–8 minutes as a healthier option.
