  • 4 slices Sourdough or French bread Use day-old bread for a crisper texture.
  • 2 tablespoons Olive oil For brushing the bread and sautéing mushrooms.
  • 8 ounces Mushrooms (such as cremini or button) Chopped.
  • 2 cloves Garlic Minced.
  • 1 cup Cheese blend (such as mozzarella and cheddar) Feel free to swap the cheese for your favorite varieties.
  • 1 teaspoon Salt To taste.
  • 1 teaspoon Pepper To taste.
  • 2 tablespoons Fresh parsley Optional, for garnish.

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • Slice the bread into thick slices and brush both sides with olive oil. Place on a baking sheet.

Cooking

  • In a skillet, heat olive oil over medium heat. Add chopped mushrooms and minced garlic, sauté until mushrooms are tender and browned. Season with salt and pepper.
  • Top each slice of bread with the mushroom mixture, then sprinkle with the cheese blend.
  • Bake in the oven for about 10-15 minutes or until the cheese is melted and bubbly.
  • Remove from the oven and garnish with fresh parsley if desired. Serve warm.

Notes

These toasts can be paired with a fresh salad or some veggie sticks for a balanced meal. Store leftovers in an airtight container in the fridge for up to three days; can also be frozen. For a vegetarian option, add roasted red peppers or spinach.
