Preparation

  • Preheat the oven to 400°F (200°C).
  • Cut the potatoes and smoked sausage into bite-sized pieces.
  • In a large bowl, combine the potatoes and smoked sausage with olive oil, ranch dressing mix, salt, and pepper.
  • Spread the mixture onto a baking sheet.

Cooking

  • Bake for 25-30 minutes, stirring halfway through, until the potatoes are tender.
  • Sprinkle cheddar cheese on top and bake for an additional 5 minutes until the cheese melts.
  • Serve warm.

Notes

This dish is perfect on its own or paired with a fresh salad. Add a dollop of sour cream for extra creaminess. Store leftovers in an airtight container for up to three days, or freeze for up to three months.
