Cheesy Vegetable Egg Bites

These creamy and cheesy egg bites are customizable with your favorite vegetables and meats, perfect for breakfast or a snack.

Main Ingredients

  • 10 eggs 10 eggs Use whole eggs for the best texture.
  • 1/2 cup 1/2 cup milk or cream Milk or cream can be used based on preference.
  • 1 cup 1 cup shredded cheddar cheese Feel free to swap out cheddar for feta for a different flavor.
  • 1/2 cup 1/2 cup chopped vegetables of your choice Suggestions include bell peppers, tomatoes, and onions.
  • 1/2 cup 1/2 cup crumbled bacon or sausage (optional) Can substitute with ham or vegetarian sausage for a different protein.
  • 1/2 cup 1/2 cup chopped turkey (optional) Optional ingredient to include for added protein.
  • to taste Salt and pepper Adjust seasoning according to preference.
  • as needed Non-stick cooking spray Generously spray the muffin tin to prevent sticking.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • Generously spray a muffin tin with non-stick cooking spray.
  • Chop up any vegetables you plan on using and pre-cook the bacon (if using) and chop it into pieces.
  • In a medium mixing bowl, whisk together the eggs, milk or cream, salt, and pepper until fully combined and slightly frothy.

Assembly

  • Place a handful of the chopped veggies, meat, and a bit of cheese into each cavity of the muffin tin.
  • Carefully pour or spoon the egg mixture into the muffin tin, filling each cup about 3/4 of the way full.
  • Use a fork to stir each muffin cavity to ensure the ingredients are evenly mixed into the egg mixture.

Cooking

  • Bake in the preheated oven for about 12-18 minutes, or until the egg bites are set in the middle and slightly golden on top.
  • Let the egg bites cool for a few minutes before using a butter knife or spatula to gently loosen and remove from the tin.
  • Serve the egg bites warm.

Notes

These bites can be stored in an airtight container in the refrigerator for up to 4 days, or frozen for up to 2 months. Reheat in the microwave for 10 seconds when ready to eat.
