For the Cherry Amaretto Layer:
- 2 cups fresh cherries pitted and halved
- 1/4 cup granulated sugar
- 3 tbsp amaretto liqueur
- 1 tbsp lemon juice
For the Mascarpone Cream:
- 16 oz mascarpone cheese room temp
- 1 cup heavy cream
- 1/3 cup granulated sugar
- 2 tbsp amaretto liqueur
- 1 tsp vanilla extract
For Assembly:
- 24 –30 ladyfingers savoiardi
- 1 cup strong coffee or espresso cooled
- 2 tbsp amaretto liqueur
- 1/4 cup cocoa powder for dusting
- Optional: dark chocolate shavings
Prepare the Cherry Mixture:
Combine pitted cherries, sugar, amaretto, and lemon juice in a bowl. Let sit for 30 minutes to release juices.
Make the Mascarpone Cream:
Beat mascarpone until smooth. Separately, whip cream, sugar, and vanilla until soft peaks form. Gently fold whipped cream into mascarpone. Add amaretto and fold again until just combined.
Substitute amaretto with 1 tsp almond extract + 2 tbsp cherry juice for a non-alcoholic version.
Frozen cherries work well if fresh aren't available.
Tastes even better the next day as flavors meld.
Try layering in cups for mini individual tiramisus.
