  • 1.5 cups all-purpose flour
  • 0.5 cups granulated sugar
  • 2 tsp baking powder
  • 0.25 tsp salt
  • 2 tbsp brown sugar
  • 0.5 tsp cinnamon

  • 0.5 cups milk
  • 0.25 cups unsalted butter, melted
  • 1 tsp vanilla extract
  • 1 large egg

  • 1.5 cups fresh or frozen pitted cherries

Preparation

  • Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
  • In a medium bowl, whisk together the flour, granulated sugar, baking powder, and salt.
  • In another bowl, mix the milk, melted butter, vanilla extract, and egg until well combined.
  • Gradually add the wet ingredients to the dry ingredients, stirring gently until just blended. Be careful not to over-mix.
  • Fold in the cherries carefully, distributing them evenly throughout the batter.

Baking

  • Spoon the batter into the prepared muffin tin, filling each cup about two-thirds full.
  • In a small bowl, combine the brown sugar and cinnamon, then sprinkle this mixture over the tops of the muffins.
  • Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  • Allow the muffins to cool in the tin for about 5 minutes before transferring them to a wire rack to cool completely.

Notes

These muffins are fantastic on their own or with a light dusting of powdered sugar. Pair them with coffee or tea for breakfast or an afternoon snack. Store muffins in an airtight container at room temperature for three days, or freeze them for longer preservation.
