Preparation

  • Preheat your oven to 350°F (175°C).
  • In a bowl, combine the peanut butter, sugar, egg, vanilla, baking soda, and salt. Mix until well combined.
  • Scoop tablespoon-sized portions of dough onto a baking sheet lined with parchment paper.
  • Flatten each cookie slightly with a fork, making a crisscross pattern.

Baking

  • Bake for 10-12 minutes until edges are set but centers are still soft.
  • Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes
