Ingredients
  

For the dough:

  • cups all-purpose flour
  • ½ cup yellow cornmeal
  • 4 tablespoons butter
  • 2 tablespoons vegetable oil
  • 1 cup plus 2 tablespoons water
  • 2 ¾ teaspoons instant yeast
  • 1 ¾ teaspoons salt
  • 2 tablespoons olive oil

For the filling:

  • 4 cups shredded mozzarella
  • ½ cup grated parmesan
  • 1 lb spicy Italian sausage cooked
  • 1 cup sliced mushrooms
  • 1 cup diced onions
  • 2 cups chunky tomato sauce

Instructions
 

  • Make the dough: Combine all dough ingredients in a stand mixer and knead until smooth. Let rise for 1 hour.
  • Prepare the pizza pan: Grease your deep dish pizza pan lightly with oil.

Layer the pizza:

  • Spread a layer of mozzarella on the dough.
  • Add cooked sausage, mushrooms, and onions.
  • Top with chunky tomato sauce.
  • Bake: Preheat your oven to 450°F (232°C). Place the pizza on a pizza stone if available and bake for 40 minutes or until golden.
  • Cool and serve: Let the pizza cool for 3-5 minutes, slice, and enjoy with fresh parmesan and red pepper flakes.

Notes

To get the perfect deep dish crust, use a pizza stone for a crispy bottom.
Let the dough rise for at least an hour to develop flavor.
You can prepare the dough in advance and refrigerate it for up to 48 hours for better flavor development
