Ingredients
  

Main Ingredients

  • 2 pieces boneless, skinless chicken breasts
  • 2 cups mixed vegetables (such as bell peppers, zucchini, and carrots) You can use any mixed vegetables you have on hand.
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil For cooking the chicken.
  • Salt and pepper to taste
  • 1 teaspoon dried oregano or Italian seasoning

Instructions
 

Preparation

  • Heat olive oil in a skillet over medium heat.
  • Season the chicken breasts with salt, pepper, and oregano.

Cooking

  • Add the chicken to the skillet and cook until golden brown and cooked through, about 5-7 minutes per side.
  • Once the chicken is cooked, add in the minced garlic and mixed vegetables to the skillet.
  • Stir well and cook for another 5-7 minutes until the veggies are crisp-tender.

Notes

Serve hot on its own or with rice, quinoa, or fresh bread. For leftovers, store in an airtight container in the fridge for 3-4 days. Can be frozen for up to 3 months.
