Ingredients
  

  • For the Chicken:
  • 2 boneless skinless chicken breasts
  • 2 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • For the Chipotle Mayo:
  • 1/2 cup mayo
  • 2 tbsp chipotle peppers in adobo sauce minced
  • 1 tsp lime juice
  • 1/4 tsp garlic powder
  • For Assembly:
  • 8 slices sourdough bread
  • 2 ripe avocados
  • 8 slices cheddar cheese
  • 1 tomato sliced (optional)
  • Red onion slices thin
  • Butter for grilling

Instructions
 

  • Step 1: Prepare the Chicken
  • Pat chicken dry and season with chili powder, garlic powder, salt, and pepper.
  • Heat olive oil in a skillet over medium-high heat.
  • Cook chicken 5-7 minutes per side until internal temp is 165°F.
  • Rest for 5 minutes, then slice thinly against the grain.
  • Step 2: Make the Chipotle Mayo
  • In a bowl, mix mayo, chipotle peppers with adobo, lime juice, and garlic powder.
  • Stir until smooth. Adjust spice level to taste.
  • Step 3: Prep the Other Ingredients
  • Slice avocados, mash slightly with a fork, and mix with a little lime juice.
  • Slice tomato and onion. Set aside cheese and bread.
  • Step 4: Assemble and Grill
  • Butter the outside of each bread slice.
  • Spread chipotle mayo inside each slice.
  • Layer: cheese, chicken, avocado, tomato, onion, more cheese, and top bread.
  • Grill sandwich 3-4 minutes per side until golden and melty.
  • Press with spatula while cooking. Lower heat and cover if needed to melt cheese.

Notes

Southwest: Add black beans, corn, jalapeños, and pepper jack.
Mediterranean: Use feta, olives, roasted red pepper, and tzatziki.
Bacon Ranch: Add crispy bacon and ranch dressing.
BBQ: Use BBQ chicken and smoked gouda with caramelized onions.
Pesto: Swap chipotle mayo for basil pesto and use mozzarella.
For meal prep: cook chicken and make chipotle mayo ahead. Assemble fresh.
Keep avocado green with lime juice and sandwich between cheese slices.
