Step 1: Prepare the Chicken
Pat chicken dry and season with chili powder, garlic powder, salt, and pepper.
Heat olive oil in a skillet over medium-high heat.
Cook chicken 5-7 minutes per side until internal temp is 165°F.
Rest for 5 minutes, then slice thinly against the grain.
Step 2: Make the Chipotle Mayo
In a bowl, mix mayo, chipotle peppers with adobo, lime juice, and garlic powder.
Stir until smooth. Adjust spice level to taste.
Step 3: Prep the Other Ingredients
Slice avocados, mash slightly with a fork, and mix with a little lime juice.
Slice tomato and onion. Set aside cheese and bread.
Step 4: Assemble and Grill
Butter the outside of each bread slice.
Spread chipotle mayo inside each slice.
Layer: cheese, chicken, avocado, tomato, onion, more cheese, and top bread.
Grill sandwich 3-4 minutes per side until golden and melty.
Press with spatula while cooking. Lower heat and cover if needed to melt cheese.
