  • 2 slices slices of bread Use your favorite type of bread for added flavor.
  • 1 unit grilled chicken breast, sliced Rotisserie chicken works great as an alternative.
  • 1 ripe avocado mashed Make sure to mash the avocado well for smooth spreading.
  • 1/2 cup shredded cheese (cheddar or mozzarella) Experiment with different cheeses like pepper jack or feta.
  • Salt and pepper to taste
  • Butter for spreading

Preparation

  • Preheat a skillet over medium heat.
  • Spread butter on one side of each slice of bread.
  • On the unbuttered side of one slice, layer the grilled chicken, mashed avocado, and shredded cheese.
  • Season with salt and pepper.
  • Top with the second slice of bread, buttered side facing out.

Cooking

  • Place the sandwich in the skillet and cook until golden brown on one side, about 3-4 minutes.
  • Flip the sandwich and cook until the other side is golden and the cheese is melted, about 3-4 more minutes.
  • Remove from skillet, slice, and serve immediately.

Notes

To keep leftovers fresh, store any uneaten sandwich in an airtight container in the fridge. Best to eat within a day. For freezing, wrap tightly and store in the freezer for up to a month, reheating in a skillet for best results.
