  • 2 slices slices of bread Use fresh bread for the best texture.
  • 1 cup cooked chicken, shredded Can substitute with turkey or tuna if preferred.
  • 1 ripe avocado mashed avocado Make sure your avocado is ripe for added creaminess.
  • 1 cup cheese (cheddar or mozzarella) Feel free to experiment with different cheeses like pepper jack for spice.
  • Salt and pepper to taste
  • Butter for grilling Don't skip the butter to achieve a golden crisp.

Preparation

  • In a bowl, mix the shredded chicken with the mashed avocado and season with salt and pepper.
  • Spread butter on one side of each slice of bread.
  • On the unbuttered side of one slice, spread the chicken and avocado mixture, top with cheese, and then place the other slice of bread on top, butter side out.

Cooking

  • Heat a skillet over medium heat and grill the sandwich until golden brown on both sides and the cheese has melted, about 3-4 minutes per side.
  • Remove from the skillet, let cool slightly, then slice and serve.

Notes

This sandwich is wonderful on its own or paired with a fresh salad, some crispy tortilla chips, or a bowl of soup. Store any uneaten sandwiches in an airtight container in the fridge for up to two days, or freeze them before grilling for longer storage. When grilling from frozen, thaw them in the fridge first.
