For the Chicken:
- 2 lbs boneless skinless chicken breasts
- 2 tbsp cooking oil
- 1 packet taco seasoning
- 1/2 cup chicken broth
For the Ranch Sauce:
- 1 cup ranch dressing
- 2 tbsp lime juice
- 1 tsp chili powder
- 1/2 tsp garlic powder
For Assembly:
- 6 large burrito-size tortillas
- 2 ripe avocados
- 1 cup shredded cheese
- 1 cup chopped lettuce
- 1/2 cup diced tomatoes
- 1/4 cup finely chopped red onion
- 1/4 cup chopped cilantro
Make Ranch Sauce:
In a bowl, combine ranch dressing, lime juice, chili powder, and garlic powder. Mix well and adjust seasoning to taste.
Assemble Burritos:
Microwave tortillas for ~15 seconds to soften. Spread ranch sauce in the center. Layer with chicken, avocado mash, cheese, lettuce, tomatoes, red onion, and cilantro. Fold in sides and roll tightly from the bottom.
