Ingredients
  

For the Chicken:

  • 2 lbs boneless skinless chicken breasts
  • 2 tbsp cooking oil
  • 1 packet taco seasoning
  • 1/2 cup chicken broth

For the Ranch Sauce:

  • 1 cup ranch dressing
  • 2 tbsp lime juice
  • 1 tsp chili powder
  • 1/2 tsp garlic powder

For Assembly:

  • 6 large burrito-size tortillas
  • 2 ripe avocados
  • 1 cup shredded cheese
  • 1 cup chopped lettuce
  • 1/2 cup diced tomatoes
  • 1/4 cup finely chopped red onion
  • 1/4 cup chopped cilantro

Instructions
 

Cook Chicken:

  • Chop chicken into ½-inch pieces. Heat oil in skillet over medium-high heat. Cook chicken until browned and no longer pink (about 5–6 minutes). Stir in taco seasoning and broth, simmer until most of the liquid is absorbed. Set aside.

Make Ranch Sauce:

  • In a bowl, combine ranch dressing, lime juice, chili powder, and garlic powder. Mix well and adjust seasoning to taste.

Prepare Avocados:

  • Cut and pit avocados, mash in a bowl with a pinch of salt and a dash of lime juice. Keep it a little chunky.

Assemble Burritos:

  • Microwave tortillas for ~15 seconds to soften. Spread ranch sauce in the center. Layer with chicken, avocado mash, cheese, lettuce, tomatoes, red onion, and cilantro. Fold in sides and roll tightly from the bottom.

Optional Crisping:

  • Place rolled burritos seam-side down in a hot pan and cook until golden for extra crunch.

Serve:

  • Slice diagonally and serve with extra ranch sauce for dipping.

Notes

Make ahead by prepping chicken and sauce—add avocado just before serving.
To freeze: wrap tightly in plastic wrap, then foil.
Swap ranch with Greek yogurt for a lighter version.
Avocado hack: use store-bought guacamole or even hummus if avos aren’t ripe!
