Step 1: Prepare the Chicken
Slice chicken breasts horizontally into thin cutlets.
In three bowls, set up your breading station: flour in one, beaten eggs in another, panko mixed with garlic powder, Italian seasoning, salt, and pepper in the third.
Coat each chicken cutlet in flour, dip in egg, then press into panko mixture.
Heat oil in a skillet over medium-high heat.
Fry chicken 4–5 minutes per side until golden and internal temp reaches 165°F.
Drain on paper towels.
Step 2: Make the Caesar Dressing
Whisk all dressing ingredients in a bowl until smooth.
Taste and adjust with lemon, pepper, or Worcestershire as needed.
Store covered in the fridge until use.
Step 3: Assemble the Sandwich
Warm croissants in oven at 350°F for 5 minutes (optional).
Spread dressing on both halves of croissant.
Add crispy chicken, lettuce, Parmesan, and optional croutons.
Close with top half of croissant and slice diagonally.
