  • 1 pound boneless, skinless chicken breasts
  • Salt to taste salt
  • Pepper to taste pepper
  • 1 tablespoon olive oil for cooking the chicken
  • 1 cup romaine lettuce, chopped
  • ½ cup Caesar dressing adjust to taste
  • ¼ cup freshly grated Parmesan cheese
  • 4 slices bread (your choice) use preferred type of bread

Preparation

  • Season the chicken breasts with salt and pepper.
  • Heat olive oil in a skillet over medium heat and cook the chicken until golden and crispy, around 6-7 minutes per side.
  • While the chicken cooks, mix the chopped romaine with Caesar dressing and Parmesan cheese.
  • Toast the slices of bread lightly.
  • Once the chicken is cooked, slice it into strips.
  • Assemble by placing the chicken on the bread, followed by the Caesar salad. Top with another slice of bread.

Notes

Serve with crispy baked fries or a fresh fruit salad for a complete meal. Store leftovers in an airtight container for up to 2 days or freeze for up to a month.
