Ingredients

For the Caesar Dressing

  • 1/2 cup mayonnaise (avocado oil mayo preferred)
  • 2 tablespoons lemon juice (fresh)
  • 1 tablespoon Dijon mustard
  • 2 cloves garlic (minced)
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon anchovy paste (optional)
  • 1/4 cup grated Parmesan cheese (for dressing)
  • Salt and black pepper (to taste)

For the Wraps

  • 2 boneless, skinless chicken breasts (about 1 lb total)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 large flour tortillas (burrito-size)
  • 4 cups chopped romaine lettuce
  • 1 cup cherry tomatoes (halved)
  • 1/2 cup grated Parmesan cheese (for wraps)
  • 1/4 cup croutons (crushed)

Instructions

Preparation of Dressing

  • In a medium bowl, whisk together the mayonnaise, lemon juice, Dijon mustard, minced garlic, Worcestershire sauce, and anchovy paste until completely smooth. Stir in the Parmesan cheese and season with salt and pepper to taste. Set aside at room temperature.

Cooking the Chicken

  • Pat the chicken breasts dry with paper towels, then season both sides evenly with garlic powder, salt, and black pepper. If the chicken breasts are thick, pound them to even ½-inch thickness for faster cooking.
  • Heat olive oil in a large skillet over medium-high heat until it shimmers. Add the chicken breasts and cook for 7-8 minutes per side without moving them until a golden crust forms and the internal temperature reaches 165°F.
  • Transfer the cooked chicken to a cutting board and let it rest for 5 minutes, then slice into thin strips.

Assembling the Wraps

  • Warm the tortillas in a dry skillet for 10-15 seconds per side or microwave for 15 seconds until pliable.
  • Spread 2-3 tablespoons of Caesar dressing down the center of each tortilla, leaving 2 inches at the top and bottom. Layer with romaine lettuce, sliced chicken, cherry tomatoes, Parmesan cheese, and crushed croutons.
  • Fold in the sides of the tortilla, then roll from the bottom up tightly. Cut in half diagonally and serve immediately.

Notes

Use different proteins like turkey or tofu for a fun twist. Make sure to warm your tortillas so they’re easier to roll. Don't overfill the wraps to avoid tearing.
