Ingredients
  

  • 1.5 lbs chicken breast, cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 tablespoon dried oregano
  • 2 cloves garlic , minced
  • 1 teaspoon sea salt
  • 0.5 teaspoon black pepper
  • 2 cups cooked basmati rice
  • 1 cup cherry tomatoes, halved
  • 1 cup English cucumber, diced
  • 0.5 cup red onion, thinly sliced
  • 0.5 cup kalamata olives, pitted
  • 0.5 cup feta cheese, crumbled
  • 0.5 cup tzatziki sauce
  • 1 tablespoon fresh parsley, finely chopped

Instructions
 

  • Combine chicken, olive oil, oregano, garlic, salt, and pepper in a mixing bowl and toss to coat thoroughly.
  • Heat a large non-stick skillet over medium-high heat.
  • Add chicken to the skillet and sauté for 8 to 10 minutes, or until the internal temperature reaches 165°F (74°C).
  • Distribute the cooked rice evenly into four serving bowls.
  • Arrange the cooked chicken, tomatoes, cucumber, red onion, and olives over the rice base.
  • Top each bowl with a serving of tzatziki sauce and garnish with crumbled feta and fresh parsley.
