Instructions
Combine chicken, olive oil, oregano, garlic, salt, and pepper in a mixing bowl and toss to coat thoroughly.
Heat a large non-stick skillet over medium-high heat.
Add chicken to the skillet and sauté for 8 to 10 minutes, or until the internal temperature reaches 165°F (74°C).
Distribute the cooked rice evenly into four serving bowls.
Arrange the cooked chicken, tomatoes, cucumber, red onion, and olives over the rice base.
Top each bowl with a serving of tzatziki sauce and garnish with crumbled feta and fresh parsley.
