Meatloaf Mixture

  • 1 lb ground chicken Use lean ground chicken for a softer texture.
  • 1 cup breadcrumbs Can substitute with whole wheat breadcrumbs for added fiber.
  • 1/2 cup shredded cheese Experiment with different cheeses for varied flavors.
  • 2 cloves garlic, minced
  • 1/4 cup chopped onion
  • 1 egg
  • 1/4 cup ketchup For a kid-friendly twist, use BBQ sauce instead.
  • Salt and pepper to taste

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a large bowl, combine the ground chicken, breadcrumbs, shredded cheese, minced garlic, chopped onion, egg, and ketchup.
  • Season with salt and pepper, mixing until well combined.
  • Transfer the mixture to a loaf pan and shape it into a loaf.

Cooking

  • Bake for 30 minutes, or until cooked through and juices run clear.
  • Let rest for a few minutes before slicing and serving.

Notes

This meatloaf can be served alone or with sides like mashed potatoes and green beans. For storage, let it cool, use an airtight container for up to three days in the fridge, or slice and freeze.
