Ingredients
  

  • 2 lbs ground chicken (mix of breast and thighs preferred)
  • 1 cup breadcrumbs
  • 3/4 cup Parmesan cheese, freshly grated
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 2 large eggs
  • 1/4 cup milk
  • 1 tsp salt
  • 1/2 tsp black pepper
  • Optional: tomato sauce or extra Parmesan for serving

Instructions
 

  • Preheat oven to 375°F (190°C). Grease and flour a 9x5-inch loaf pan or line with parchment for easy removal.
  • In a large bowl, combine ground chicken, breadcrumbs, Parmesan, onion, garlic, eggs, milk, salt, and pepper. Mix gently with hands until just combined.
  • Transfer mixture to the loaf pan or shape into a free-form loaf on a lined baking sheet. Bake for 50–60 minutes, until golden brown and internal temp reaches 165°F (74°C).
  • Let meatloaf rest in the pan for 10 minutes before slicing. Serve with tomato sauce, Parmesan, or fresh herbs.

Notes

For best results, use a mix of ground chicken breast and thighs for flavor and moisture. Don’t skip the cooling time before slicing—this keeps the loaf from falling apart. Serve with tomato sauce, extra Parmesan, or a fresh herb topping. Leftovers make fantastic sandwiches.
