Ingredients
  

  • 6 oz fresh chicken of the woods mushrooms young and tender
  • 3 tablespoons cooking olive oil
  • 2 oz minced shallot
  • 2 tablespoons dry white wine
  • 1/4 cup chicken stock
  • 1/2 cup heavy cream
  • 1-2 tablespoons Parmesan cheese

Instructions

  • Cook the mushrooms: Heat 1 tablespoon olive oil in a large skillet over low heat. Sauté the mushrooms for 5-7 minutes per side until golden brown.
  • Optional grilling: For a smoky flavor, grill the mushrooms, basting with marinade to keep them moist.
  • Serve: Plate the mushrooms as a main course or meat-free option. Garnish with fresh parsley and Parmesan, if desired.
