Ingredients
  

  • 2 chicken breasts or tenderloins
  • 2 celery stalks finely diced
  • ½ cup full-fat mayonnaise
  • 1 tbsp apple cider vinegar
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ¼ tsp salt
  • ¼ tsp pepper

Instructions
 

  • Poach the chicken breasts or tenderloins until they reach an internal temperature of 165°F.
  • Let the chicken cool completely before shredding with forks or a hand mixer for a smooth texture.
  • In a large bowl, combine the shredded chicken, diced celery, mayonnaise, apple cider vinegar, garlic powder, onion powder, salt, and pepper.
  • Stir gently until everything is well combined and creamy.
  • Chill the mixture for at least 30 minutes to allow the flavors to meld together.
  • Taste and adjust the seasoning with more mayonnaise or vinegar if needed.
