Ingredients
  

Taquito Filling

  • 2 cups shredded chicken Use rotisserie chicken for a quicker option.
  • 1 cup cream cheese
  • 1 cup shredded cheese (cheddar or Mexican blend) Feel free to mix different cheeses.
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon chili powder Add diced jalapeños for a spicier option.
  • to taste salt and pepper

Taquito Assembly

  • 10-12 Tortillas (flour or corn) Warm tortillas to prevent cracking while rolling.

Preparation

  • Preheat the oven to 425°F (220°C).
  • In a large bowl, mix the shredded chicken, cream cheese, shredded cheese, garlic powder, onion powder, chili powder, salt, and pepper until well combined.

Assembling Taquitos

  • Take a tortilla and add a few tablespoons of the filling in the center.
  • Roll the tortilla tightly around the filling and place it seam side down on a baking sheet.
  • Brush the taquitos with oil for extra crispiness.

Baking

  • Bake in the preheated oven for 15-20 minutes or until golden brown and crispy.

Serving

  • Serve warm with guacamole or salsa.

Notes

Store any leftovers in an airtight container in the fridge for 3–4 days. To freeze, wrap tightly and place in a freezer bag. Reheat in the oven at 350°F (175°C) for 10-15 minutes.
