Chili Lime Bean Salad

Ingredients
  

  • 15 oz canned black beans, drained and rinsed
  • 15 oz canned kidney beans, drained and rinsed
  • 1.5 cups sweet corn, fresh or thawed frozen
  • 1 medium red bell pepper, diced
  • 0.5 cup red onion, finely diced
  • 0.25 cup fresh cilantro, chopped
  • 1 jalapeno , seeded and minced
  • 3 tablespoons extra -virgin olive oil
  • 0.25 cup fresh lime juice
  • 1 teaspoon chili powder
  • 0.5 teaspoon ground cumin
  • 0.5 teaspoon sea salt
  • 0.25 teaspoon black pepper

Instructions
 

  • In a small bowl, whisk together the olive oil, lime juice, chili powder, ground cumin, sea salt, and black pepper to create the dressing.
  • In a large mixing bowl, combine the black beans, kidney beans, corn, red bell pepper, red onion, cilantro, and minced jalapeno.
  • Pour the dressing over the bean mixture.
  • Toss all ingredients thoroughly until the vegetables and beans are evenly coated.
  • Cover and refrigerate for at least 30 minutes before serving to allow the flavors to meld.
