Ingredients
  

For the Chicken

  • 2 pieces boneless, skinless chicken breasts Look for thin chicken breasts for faster cooking.
  • 1 tablespoon chipotle seasoning Ensure to season well for flavor.
  • 1 tablespoon olive oil For grilling.
  • to taste salt and pepper Adjust seasoning as desired.

For the Burrito

  • 1 cup cooked rice
  • 1 cup black beans, rinsed and drained Can substitute with pinto beans, lentils, or chickpeas.
  • 1 cup mixed fresh vegetables (like bell peppers and onions) Feel free to use your favorite veggies.
  • ½ cup chipotle ranch dressing Serve extra on the side.
  • 4 large tortillas Using large tortillas helps hold more filling.

Instructions
 

Preparation

  • Preheat the grill to medium-high heat.
  • Season the chicken breasts with chipotle seasoning, salt, and pepper.
  • Drizzle some olive oil on the grill and add the chicken.

Cooking

  • Grill the chicken for about 6-7 minutes on each side, or until cooked through.
  • While the chicken is grilling, prepare your vegetables.
  • Once the chicken is done, let it rest for a few minutes before slicing it.

Assembly

  • Lay a tortilla flat and add a portion of rice, black beans, grilled chicken, fresh vegetables, and a drizzle of chipotle ranch dressing.
  • Fold in the sides of the tortilla and then roll it up tightly from the bottom.

Serving

  • Serve with extra chipotle ranch dressing on the side.

Notes

These burritos can be paired with tortilla chips and salsa for crunch. Store leftovers in an airtight container in the fridge for up to 3 days or freeze (without dressing) for up to 2 months. Reheat in microwave or pan to enjoy.
