  • 1 cup black beans Canned or cooked black beans work well.
  • 1 cup diced tomatoes Use fresh or canned tomatoes.
  • 1 cup bell peppers, diced Any color bell pepper can be used.
  • 1 cup lettuce, shredded Romaine or iceberg lettuce is suitable.
  • 1 count avocado, sliced Use ripe avocados for best flavor.
  • salsa or hot sauce (optional) Choose your favorite spicy condiment.
  • olive oil (for cooking) Use as needed for cooking the turkey.

Preparation

  • In a skillet, heat olive oil over medium heat.
  • Add the ground turkey and taco seasoning, cooking until the turkey is browned and fully cooked.
  • In separate bowls, prepare the toppings with corn, black beans, diced tomatoes, bell peppers, lettuce, and avocado.

Assembly

  • Assemble the taco bowls by layering the taco meat, followed by the veggies and toppings of your choice.
  • Serve with salsa or hot sauce if desired.

Notes

Store leftovers in separate airtight containers in the fridge for 3-4 days. Cooked turkey can be frozen for up to 2 months.
