  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chocolate chips
  • 1/2 cup cherry preserves

Ganache Ingredients

  • 1/2 cup heavy cream for ganache

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a large bowl, cream together the butter, granulated sugar, and brown sugar until smooth.
  • Beat in the eggs one at a time, then stir in the vanilla.
  • In another bowl, combine flour, cocoa powder, baking soda, and salt. Gradually add to the creamed mixture, mixing well.
  • Stir in chocolate chips.
  • Roll dough into balls and place on a baking sheet.
  • Make a thumbprint in the center of each cookie.
  • Bake for 10-12 minutes.

Ganache Preparation

  • For the ganache, heat the heavy cream until it’s just about to simmer. Pour over chocolate chips and stir until melted and smooth.
  • Fill each thumbprint with cherry preserves, then drizzle with the chocolate ganache.
  • Let cool before serving.

Notes

Chill the dough for 30 minutes to make rolling easier. Use a melon baller for evenly sized cookie balls. Don’t skip the ganache; it’s a delicious upgrade! Experiment with different flavored preserves if you’re in the mood for variety. Make sure not to overbake; they should feel soft when coming out of the oven.
