Ingredients
  

For the crust

  • 1.5 cups 1 1/2 cups graham cracker crumbs
  • 0.5 cups 1/2 cup sugar
  • 0.5 cups 1/2 cup unsalted butter, melted

For the cheesecake filling

  • 16 oz 16 oz cream cheese, softened Ensure it is completely softened for easy mixing.
  • 1 cup 1 cup sugar
  • 1 tsp 1 tsp vanilla extract
  • 3 large 3 large eggs Add eggs one at a time, mixing well.

For the topping

  • 1 cup 1 cup chocolate chip cookie dough Store-bought dough can be used for convenience.
  • 0.5 cups 1/2 cup chocolate chips Can substitute with white chocolate or butterscotch chips.

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a bowl, combine graham cracker crumbs, 1/2 cup sugar, and melted butter. Press into the bottom of a greased 9x13 inch baking pan.
  • In another bowl, beat the cream cheese, 1 cup sugar, and vanilla until smooth. Add eggs one at a time, mixing well after each addition.
  • Pour the cream cheese mixture on top of the crust.
  • Drop spoonfuls of cookie dough on top of the cream cheese mixture, and sprinkle with chocolate chips.
  • Bake for 30-35 minutes or until set.

Cooling and Serving

  • Let cool, then refrigerate for at least 2 hours before cutting into bars.

Notes

Enhance bars with whipped cream or ice cream. Store leftovers in an airtight container in the refrigerator for up to a week or freeze for up to three months. Allow to sit at room temperature or microwave briefly for reheating.
