Chocolate Chip Cheesecake Bars

These delightful bars combine creamy cheesecake with sweet chocolate chip cookie dough for a guaranteed crowd-pleaser.

Ingredients
  

For the crust

  • 1.5 cups graham cracker crumbs
  • cup sugar
  • ½ cup butter, melted

For the cheesecake filling

  • 2 packages (8 oz) cream cheese, softened Make sure it's softened for smooth mixing.
  • 1 cup sugar
  • 1 tsp vanilla extract
  • 2 large eggs Add one at a time.

For the topping

  • 1 cup chocolate chip cookie dough Store-bought or homemade.
  • 1 cup chocolate chips Optional, for topping.

Instructions
 

Preparation

  • Preheat the oven to 325°F (160°C). Grease a 9x13 inch baking pan.
  • In a medium bowl, combine graham cracker crumbs, ⅓ cup sugar, and melted butter. Press mixture firmly into the bottom of the prepared pan to form the crust.

Making the Cheesecake Filling

  • In a large bowl, beat the cream cheese until smooth. Add in 1 cup sugar and vanilla extract; mix until combined.
  • Add the eggs one at a time, mixing well after each addition. Pour the cream cheese mixture over the graham cracker crust.
  • Drop spoonfuls of cookie dough on top of the cheesecake layer and gently swirl it with a knife.
  • Optional: Sprinkle chocolate chips on top.

Baking

  • Bake for 30-35 minutes, or until the center is set and does not jiggle.
  • Let cool completely, then refrigerate for at least 2 hours before slicing into bars. Enjoy!

Notes

To keep leftover cheesecake bars fresh, store them in an airtight container in the fridge. You can also freeze them by wrapping each bar in plastic wrap and then placing them in a freezer bag. Thaw in the fridge overnight before enjoying.
