Ingredients
  

  • For the Cookie Dough:
  • 2 1/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup unsalted butter softened
  • 3/4 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 1 1/2 cups chocolate chips
  • For the Cheesecake Filling:
  • 8 oz cream cheese softened
  • 1/4 cup granulated sugar
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions
 

  • Step 1: Prepare Cheesecake Filling
  • Beat cream cheese until smooth (about 2 minutes).
  • Mix in sugar, vanilla, and salt until well combined.
  • Scoop teaspoon-sized portions onto parchment-lined tray.
  • Freeze for 30 minutes or until firm.
  • Step 2: Make Cookie Dough
  • Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  • Whisk together flour, baking soda, and salt in a bowl.
  • In another bowl, beat butter and both sugars until light and fluffy (about 3 minutes).
  • Add eggs one at a time, then mix in vanilla.
  • Gradually add dry ingredients and mix until just combined.
  • Fold in chocolate chips.
  • Step 3: Assemble and Bake
  • Scoop about 2 tbsp of dough and flatten into a disc.
  • Place frozen cheesecake ball in the center.
  • Wrap dough around filling and seal well.
  • Place cookies 2 inches apart on baking sheet.
  • Bake for 12–14 minutes until edges are golden.
  • Let cool 5 minutes on sheet, then transfer to wire rack.

Notes

Store cookies in an airtight container in the fridge for up to 5 days.
Reheat in microwave for 10–15 seconds before serving.
Try variations like peanut butter, strawberry, or caramel fillings for a twist.
