Ingredients
  

Dry Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 tsp baking powder Make sure it's fresh for best results
  • 1/2 tsp baking soda Make sure it's fresh for best results
  • 1/4 tsp salt

Wet Ingredients

  • 1/2 cup brewed coffee, cooled Can be substituted with milk or almond milk if preferred
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1 tsp vanilla extract

Mix-ins

  • 1/2 cup bittersweet chocolate chips Can swap with other types of chocolate
  • 1/2 cup toffee bits

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  • In a large bowl, whisk together flour, cocoa powder, granulated sugar, brown sugar, baking powder, baking soda, and salt.
  • In another bowl, mix together the brewed coffee, vegetable oil, egg, and vanilla extract.
  • Pour the wet ingredients into the dry ingredients and stir until just combined.
  • Gently fold in the chocolate chips and toffee bits.
  • Divide the batter evenly among the muffin cups, filling each about 2/3 full.

Baking

  • Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the muffins cool in the pan for a few minutes before transferring to a wire rack to cool completely.

Notes

These muffins can be enjoyed warm or at room temperature. They pair wonderfully with a cup of tea or coffee. For an indulgent treat, add a spread of butter or cream cheese.
