Ingredients
  

Dry Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Wet Ingredients

  • 1/2 cup unsalted butter, softened Make sure it's softened but not melted.
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar Can replace with coconut sugar for a different flavor.
  • 1 teaspoon vanilla extract
  • 1 large egg large egg

Add-ins

  • 1 cup chocolate chips Use dark chocolate chips for a richer taste.
  • 1 cup mini marshmallows Use for an even distribution in the cookie.

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  • In a separate large bowl, beat the butter, brown sugar, and granulated sugar until creamy.
  • Add in the vanilla extract and egg, mixing well.
  • Gradually add the dry ingredients to the wet mixture, blending until just combined.
  • Fold in the chocolate chips and marshmallows.

Baking

  • Drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  • Bake for 10-12 minutes, or until the edges are firm.
  • Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

These cookies can be served with a scoop of vanilla ice cream or paired with warm cocoa. Store in an airtight container for freshness.
